Celery, whole head 500 g
Green apples 300 g
Lime leaf, torn 4 leaves
Cucumber 150 g
Method
01 Apple first to carry the celery through, lime leaf tucked between the stalks.
02 Cucumber last — it presses to almost nothing and clears the chute.
03 Drink within the hour; celery juice turns fast.

To bake
Green pulp, from the press 1.75 c
Golden flaxseed 90 g
Sesame 40 g
Water 120 ml
Method
01 Stir everything together and let it sit fifteen minutes until the flax gels.
02 Spread paper-thin between two sheets of parchment, score into shards.
03 120°C for 90 minutes, until they lift clean and crack when bent.
